Basically, I take the lid of the dutch oven, which is shaped to double as a skillet, and heat it up (on stovetop) at the same time as I heat up the bottom of the dutch oven. When they're both hot enough I put the prepared panini in the middle of the skillet/top, then take the hot dutch oven itself, which weighs a million pounds, and put it on top of the sandwich, holding it in place if necessary, until I judge that the sandwich is ready.
