I forgot to mention that the second rise for both doughs is relatively short, about 10 minutes. If you freeze the dough, defrost it in the fridge, then take it out about 30 minutes before you want to shape your pizza to let it come up to room temp. <BR/><BR/>Jes,<BR/>Brick ovens are about 800F to 1200 F (eek!) so I think the highest heat a home oven can achieve will make a really good pizza. It uses sponge-method, so the flavour of wheat comes out more. But I still slow-ferment it overnight in the fridge. The result is even better! :D <BR/><BR/>But I am still experimenting with all sorts of pizza crust recipes ;).
