The original CI recipe specified a 9inch springform. I've had good results with an 8 inch cake pan. Also make sure to work quickly as the acidity in the buttermilk and the baking soda start to work right away. Try to get them into the oven as soon as possible. You can also try baking them individually in a muffin tin and see if that works better.
